Hi there! This is my first official recipe on here. 

I love being a home cook; everything I do, I do from scratch with love and dedication.

This recipe, in particular, went through a lot of trials and errors! But after practice, I finally found the perfect ingredients measurements for it! 

For the flour in the galette crust, you can replace the 1 cup of flour  (1/3 cup of almond flour and 2/3 cup all-purpose flour) with 1 cup of fine oat flour! I went for gluten-free flour.

The solid coconut oil can be replaced with the same amount of solid vegan butter; choose your preferred one! The recipe calls for 2 tbsps, but you might want to go for 3 tbsps, depending on your preference and dough!

For the tomatoes in the galette filling, you have different options - you can use cherry tomatoes, aroma tomatoes or heirloom tomatoes, whichever you have at home. The amount is basically as desired; some people prefer it packed with more tomato, while some prefer it to be less.

Galette Crust
 1 cup Gluten-Free Flour (substitutes available above)
 2 tbsp Solid Coconut Oil (substitutes available above)
 7 tbsp Chilled Water (about 1/3cup)
Filling
 2 Medium Organic Tomatoes
 Organic Rocket Leaves (desired quantity)
 Vegan Mozarella/Ricotta (desired quantity)
 Balsamic Vinegar

Preparation

Preheat your oven to 180 degrees Celsius (350 degrees Fahrenheit).

In a bowl, slowly mix all the galette crust ingredients, adding water only a few tbsps at a time till the dough comes together. Cover and refrigerate the ball of dough for 15 minutes.

Gently roll the dough between sheets of butter or wax paper to about 1/4 inch thickness and smoothen the edges.

Remove the top layer of butter or wax paper. Leaving a few inches at the border on all sides, arrange your ricotta cheese and whole /cut tomato into the centre.

Gently lift the empty edges using the bottom butter or wax paper, carefully folding all sides of the galette crust and tucking in the Tomatoes and cheese centre.

Bake for 20-25 minutes till the galette crust is brown and firm to touch.

If you are using mozzarella, add it over the tomatoes at this point and bake for a few more minutes till just melted.

Top with fresh rocket leaves and drizzle with balsamic vinegar.
